Spicy Chickpea Stew
This spicy chickpea stew is a hearty and flavorful dish that's perfect for a quick and easy weeknight meal. Packed with protein and fiber, it will keep you feeling satisfied and nourished.
Ingredients:
- 2 cans chickpeas, drained and rinsed
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 can diced tomatoes
- 1 cup vegetable broth
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp chili powder
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions:
In a large pot, heat olive oil over medium heat
Add onions and saut until translucent
Add garlic and cook for another minute
Add bell pepper, chickpeas, diced tomatoes, vegetable broth, and spices
Bring to a simmer and cook for 15-20 minutes, stirring occasionally
Adjust seasoning if needed
Serve hot and garnish with fresh cilantro if desired
