Broccoli Pistachio Soup
A creamy and flavorful soup combining the goodness of broccoli and the nuttiness of pistachios. Perfect for a comforting and nutritious meal.
Ingredients:
- 1 lb broccoli, chopped
- 1/2 cup shelled pistachios
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup unsweetened almond milk
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
Put olive oil in a big pot and heat it over medium-low heat
Put in the garlic and diced onions, and saut until the onions are soft
After you add the pistachios and chopped broccoli, cook for 5 minutes
Add the vegetable broth and boil it
Turn down the heat, cover, and let it simmer for 15 to 20 minutes, or until the broccoli is soft
Blend the soup until it's smooth with an immersion blender
Add the almond milk and season with pepper and salt
Simmer for five more minutes, stirring every now and then
Add some chopped pistachios on top of the hot dish to serve
